INTERPRETATION OF THE STONE

This Ohira has such a nice feeling to it, producing
an almost black mud after a few strokes that has a smooth silky feel. In the 6k-8k range this medium stone had overall very high ease of use with excellent polishing power. Almost feeling like a mix between a namito and suita if that makes sense.

Working well across all types of carbon steel and soft iron cladding as well as Honyaki, when pushed further the stone started to bring out grain and texture in hardened carbon steel, making the steel appear darker depending on the technique used.
For Damascus carbon steel there was nice separation in each layer when used with light pressure and a bit more water. A stone with a lot of potential in polishing and finer polishing work when wanting to reveal detail in carbon cladding.

Equally it produced excellent edges both fine and toothy that could be used for general kitchen work or more fine cutting purposes.

Overall a pleasure to use, the type of stone that keeps you thinking about sharpening

Prepared for Use

Komon does more than simply select workable natural stones.
Even the finest natural stone cannot be used for sharpening straight from the mountain. Each stone must be carefully prepared and finished before it is ready for use.

At Komon, each stone is carefully prepared and finished by craftsmen with extensive experience and knowledge of natural stones, so that its qualities can be experienced from the moment it is put to use.

  • A STABLE BASE

    We carefully flatten the back side to ensure stability during sharpening. When additional support is needed, we attach a wooden base to create a secure foundation.

    Any wobbling of the stone affects the precision of the sharpening process; stability is particularly crucial during final polishing and edge sharpening.

  • A READY-TO-SHARPEN SURFACE

    The sharpening surface is flattened and prepared for use.
    Softer stones intended for polishing and finishing are given generously rounded edges. Harder stones used for edge sharpening are also carefully rounded to prevent the stone from damaging the blade.

    As a natural stone is used, new layers of stone will gradually appear. Regular flattening and maintenance are therefore essential to keep the stone performing at its best.

  • PROTECTING THE STONE FOR YEARS TO COME

    Natural stones are formed by nature, and some may contain weaknesses that could eventually develop into cracks.
    We identify these stones in advance and, when necessary, reinforce the surrounding areas with cashew resin to help prevent future damage.

    Cashew resin can scratch a blade. Before use, any exposed cashew resin on the corner should be carefully rounded with a medium grit diamond plate.
