INTERPRETATION OF THE STONE

This stone was chosen again mainly as an edge sharpening stone for single and double bevel kitchen knives, as well as for Japanese wood working tools, kamisori and uraoshi

A hard stone with very fine grain and a smooth feeling across the entire stone. During edge sharpening the smooth feeling was particularly nice with good ease of use for a harder stone.

Mainly tested on carbon steel, white and blue as well as ginsan and stryx, with surprisingly good results on all steels. With a bit of mud built up from a 600 atoma or included Nagura the edge was toothy and crispy, with only water on the stone surface the edge became very fine yet kept its bite. Overall the edge I felt was on the finer side.

I tested this stone for polishing on flat surfaces such as kiridashi, Kanna and single bevel knives sharpened with very flat bevels. Though possible I don’t recommend. I felt this stone has great potential with the types f edges it could produce.

Recommend for those interested in edge sharpening in natural stones or experienced users wanting to polish on harder stones

Prepared for Use

Komon does more than simply select workable natural stones.
Even the finest natural stone cannot be used for sharpening straight from the mountain. Each stone must be carefully prepared and finished before it is ready for use.

At Komon, each stone is carefully prepared and finished by craftsmen with extensive experience and knowledge of natural stones, so that its qualities can be experienced from the moment it is put to use.

  • A STABLE BASE

    We carefully flatten the back side to ensure stability during sharpening. When additional support is needed, we attach a wooden base to create a secure foundation.

    Any wobbling of the stone affects the precision of the sharpening process; stability is particularly crucial during final polishing and edge sharpening.

  • A READY-TO-SHARPEN SURFACE

    The sharpening surface is flattened and prepared for use.
    Softer stones intended for polishing and finishing are given generously rounded edges. Harder stones used for edge sharpening are also carefully rounded to prevent the stone from damaging the blade.

    As a natural stone is used, new layers of stone will gradually appear. Regular flattening and maintenance are therefore essential to keep the stone performing at its best.

  • PROTECTING THE STONE FOR YEARS TO COME

    Natural stones are formed by nature, and some may contain weaknesses that could eventually develop into cracks.
    We identify these stones in advance and, when necessary, reinforce the surrounding areas with cashew resin to help prevent future damage.

    Cashew resin can scratch a blade. Before use, any exposed cashew resin on the corner should be carefully rounded with a medium grit diamond plate.
