INTERPRETATION OF THE STONE

This Okudo Suita is a fascinating stone with incredible cutting speed, producing black swarf with a couple of passes as well as being a very fine stone that is easy to use for both sharpening and polishing.

From looking at the detail that covers the stone face you'd be surprised at how smooth and uniform the sharpening experience is of this stone. Though the stone can be used for sharpening any type of carbon steel kitchen knife I found that it excels in sharpening single bevel knives as well as Japanese Kanna or wood plane.

It's large surface lends itself to a very pure natural stone, sharpening experience. I have used this stone a lot, testing many types of kitchen knives from all over Japan, as well as as many types of steel forging styles, both tools and kitchen knives, a very versatile stone that if you needed only one natural stone in your collection, this could be the one.

Prepared for Use

Komon does more than simply select workable natural stones.
Even the finest natural stone cannot be used for sharpening straight from the mountain. Each stone must be carefully prepared and finished before it is ready for use.

At Komon, each stone is carefully prepared and finished by craftsmen with extensive experience and knowledge of natural stones, so that its qualities can be experienced from the moment it is put to use.

  • A STABLE BASE

    We carefully flatten the back side to ensure stability during sharpening. When additional support is needed, we attach a wooden base to create a secure foundation.

    Any wobbling of the stone affects the precision of the sharpening process; stability is particularly crucial during final polishing and edge sharpening.

  • A READY-TO-SHARPEN SURFACE

    The sharpening surface is flattened and prepared for use.
    Softer stones intended for polishing and finishing are given generously rounded edges. Harder stones used for edge sharpening are also carefully rounded to prevent the stone from damaging the blade.

    As a natural stone is used, new layers of stone will gradually appear. Regular flattening and maintenance are therefore essential to keep the stone performing at its best.

  • PROTECTING THE STONE FOR YEARS TO COME

    Natural stones are formed by nature, and some may contain weaknesses that could eventually develop into cracks.
    We identify these stones in advance and, when necessary, reinforce the surrounding areas with cashew resin to help prevent future damage.

    Cashew resin can scratch a blade. Before use, any exposed cashew resin on the corner should be carefully rounded with a medium grit diamond plate.
