INTERPRETATION OF THE STONE

A very even and smooth stone when sharpening with very good cutting speed, easily erasing scratches from 1500-3k NSK Kogyo's diamond stones.

When worked thoroughly the mud from the stone can create a bright steel with a very nice Kasumi on the soft cladding. A harder stone that I found works well with very little water to start a mud from the soft iron or starting a mud with nagura or a surface texture from a 400-600 atoma.

Tested on Tanaka blue 1-2, white 1-2, single and double bevel, Ikeda and Genkai Honyaki, wrought iron and watetsu. Due to its hardness, medium hard+ working on Honyaki was a bit difficult without a mud but on soft cladding the stone performed beautifully creating a dark smooth mud that made the stone easy to polish on.

I found this stone to be best suited for softer cladding steel, soft iron as well as single bevel knives like Yanagiba. Due to its very fast cutting speed edge work was excellent, creating an exceptionally sharp edge well suited for sashimi bocho.

Prepared for Use

Komon does more than simply select workable natural stones.
Even the finest natural stone cannot be used for sharpening straight from the mountain. Each stone must be carefully prepared and finished before it is ready for use.

At Komon, each stone is carefully prepared and finished by craftsmen with extensive experience and knowledge of natural stones, so that its qualities can be experienced from the moment it is put to use.

  • A STABLE BASE

    We carefully flatten the back side to ensure stability during sharpening. When additional support is needed, we attach a wooden base to create a secure foundation.

    Any wobbling of the stone affects the precision of the sharpening process; stability is particularly crucial during final polishing and edge sharpening.

  • A READY-TO-SHARPEN SURFACE

    The sharpening surface is flattened and prepared for use.
    Softer stones intended for polishing and finishing are given generously rounded edges. Harder stones used for edge sharpening are also carefully rounded to prevent the stone from damaging the blade.

    As a natural stone is used, new layers of stone will gradually appear. Regular flattening and maintenance are therefore essential to keep the stone performing at its best.

  • PROTECTING THE STONE FOR YEARS TO COME

    Natural stones are formed by nature, and some may contain weaknesses that could eventually develop into cracks.
    We identify these stones in advance and, when necessary, reinforce the surrounding areas with cashew resin to help prevent future damage.

    Cashew resin can scratch a blade. Before use, any exposed cashew resin on the corner should be carefully rounded with a medium grit diamond plate.
