INTERPRETATION OF THE STONE

This Atago was a unique stones, producing a fine mud easily with good cutting and polishing power. 

At first giving a thick Kasumi finish, but after working the slurry the core steel starts to clear up quickly giving a very nice contrast with fine detail starting to appear in soft iron cladding, like that used in Sakai by Tanaka. 

There’s a bit of texture felt under the blade from the stones natural pattern but due to the ultra smooth feeling of the stone the texture makes no impact on sharpening feel and feedback. 

Best started with a 600 atoma surface texture washing of any mud from the atoma. Using a little water the stone starts quickly with a fine mud. A easy, versatile stone to, that can be used both for single and double bevel polishing as well as edge sharpening. 

Getting up into the 8k range the edge from this stone was very fine with good tooth working well with Yanagiba for Sashimi when used with little slurry and more water, or with mud the edge becomes a bit more aggressive with a lot more tooth, a great edge for daily use. 

Tested on single and double bevel carbon steel knives with soft cladding as well as Honyaki and wrought iron clad knives. All performed well but I really liked the fine details brought out by this stone in the soft cladding.

Prepared for Use

Komon does more than simply select workable natural stones.
Even the finest natural stone cannot be used for sharpening straight from the mountain. Each stone must be carefully prepared and finished before it is ready for use.

At Komon, each stone is carefully prepared and finished by craftsmen with extensive experience and knowledge of natural stones, so that its qualities can be experienced from the moment it is put to use.

  • A STABLE BASE

    We carefully flatten the back side to ensure stability during sharpening. When additional support is needed, we attach a wooden base to create a secure foundation.

    Any wobbling of the stone affects the precision of the sharpening process; stability is particularly crucial during final polishing and edge sharpening.

  • A READY-TO-SHARPEN SURFACE

    The sharpening surface is flattened and prepared for use.
    Softer stones intended for polishing and finishing are given generously rounded edges. Harder stones used for edge sharpening are also carefully rounded to prevent the stone from damaging the blade.

    As a natural stone is used, new layers of stone will gradually appear. Regular flattening and maintenance are therefore essential to keep the stone performing at its best.

  • PROTECTING THE STONE FOR YEARS TO COME

    Natural stones are formed by nature, and some may contain weaknesses that could eventually develop into cracks.
    We identify these stones in advance and, when necessary, reinforce the surrounding areas with cashew resin to help prevent future damage.

    Cashew resin can scratch a blade. Before use, any exposed cashew resin on the corner should be carefully rounded with a medium grit diamond plate.
