INTERPRETATION OF THE STONE
When you first put a knife to a stone you immediately get a sense of what the stone will be like. This Ohira Suita was a bit of a surprise, a fine stone in the 6k-8k range, with very good cutting speed and strong polishing qualities, with the type of tight texture I love, in the middle of the stone that slightly grabs at your edge when passing over it.
I find this characteristic in natural stones to produce exceptional sharpness on edge. both fine and with good tooth.
For polishing this stone is best used with very little water, starting a thick black slurry with the soft iron that will act as a paste like mud that helps the blade easily glide over the stone giving a bright polish to the steel and a light detailed soft iron.
This Ohira is a medium hard stone that has one area being a bit soft and smother than the slightly harder area. But going over the entire stone with a blue 1 Yanagiba iron clad and white 1 Honyaki Yanagiba I found very little noticeable difference in feel and cutting speed across the entire stone.
Over all a wonderful stone that is quite versatile for both polishing and edge sharpening, Single and double bevel knives as well as Japanese woodworking tools.
RECOMMENDED USE FOR :
Best suited for kitchen knives and Japanese wood working tools especially Kanna, Single and double bevel iron clad carbon steel, edge sharpening.

Prepared for Use

Even the finest natural stone cannot be used for sharpening straight from the mountain. Each stone must be carefully prepared and finished before it is ready for use.
At Komon, each stone is carefully prepared and finished by craftsmen with extensive experience and knowledge of natural stones, so that its qualities can be experienced from the moment it is put to use.

A STABLE BASE
We carefully flatten the back side to ensure stability during sharpening. When additional support is needed, we attach a wooden base to create a secure foundation.
Any wobbling of the stone affects the precision of the sharpening process; stability is particularly crucial during final polishing and edge sharpening.

A READY-TO-SHARPEN SURFACE
The sharpening surface is flattened and prepared for use.
Softer stones intended for polishing and finishing are given generously rounded edges. Harder stones used for edge sharpening are also carefully rounded to prevent the stone from damaging the blade.As a natural stone is used, new layers of stone will gradually appear. Regular flattening and maintenance are therefore essential to keep the stone performing at its best.

PROTECTING THE STONE FOR YEARS TO COME
Natural stones are formed by nature, and some may contain weaknesses that could eventually develop into cracks.
We identify these stones in advance and, when necessary, reinforce the surrounding areas with cashew resin to help prevent future damage.
Cashew resin can scratch a blade. Before use, any exposed cashew resin on the corner should be carefully rounded with a medium grit diamond plate.
