INTERPRETATION OF THE STONE

This Ohira Yawa, meaning soft, had a lot of unique characteristics. A medium soft stone, fine with good cutting speed that I found suited single bevel knives really well.

Though a medium soft stone it felt like a finer harder Ohira but produced mud easily like most medium soft stones. 

Overall easy to use with very good feed back, I found it produced mud well when started with little water giving a smooth texture and feel, while sharpening across the entire surface. This stone gives a very nice kasumi finish with good contrast, and brings out very nice detail in both standard cladding like most knives by Tanaka from Sakai, as well as wrought iron and Damascus.

When used for edge sharpening the surface texture of this stone produces a very fine yet toothy edge that i really liked. Not to much drag but just enough to grip the edge and not feel glassy.

Tested on both double bevel blue and white steel gyuto, and blue 1 yanagiba and white 1 Honyaki Yanagiba all worked well but I found single bevel to have the best feeling on this stone, for both Kiriha and Ura.

A great stone for both seasoned sharpeners and sharpeners wanting to try a first well rounded natural stone.

Prepared for Use

Komon does more than simply select workable natural stones.
Even the finest natural stone cannot be used for sharpening straight from the mountain. Each stone must be carefully prepared and finished before it is ready for use.

At Komon, each stone is carefully prepared and finished by craftsmen with extensive experience and knowledge of natural stones, so that its qualities can be experienced from the moment it is put to use.

  • A STABLE BASE

    We carefully flatten the back side to ensure stability during sharpening. When additional support is needed, we attach a wooden base to create a secure foundation.

    Any wobbling of the stone affects the precision of the sharpening process; stability is particularly crucial during final polishing and edge sharpening.

  • A READY-TO-SHARPEN SURFACE

    The sharpening surface is flattened and prepared for use.
    Softer stones intended for polishing and finishing are given generously rounded edges. Harder stones used for edge sharpening are also carefully rounded to prevent the stone from damaging the blade.

    As a natural stone is used, new layers of stone will gradually appear. Regular flattening and maintenance are therefore essential to keep the stone performing at its best.

  • PROTECTING THE STONE FOR YEARS TO COME

    Natural stones are formed by nature, and some may contain weaknesses that could eventually develop into cracks.
    We identify these stones in advance and, when necessary, reinforce the surrounding areas with cashew resin to help prevent future damage.

    Cashew resin can scratch a blade. Before use, any exposed cashew resin on the corner should be carefully rounded with a medium grit diamond plate.
